It is a truth universally acknowledged that I am a woman prone to the most fleeting of culinary obsessions. Cravings come and go and I, not in possession of the willpower I was born with, find myself unable to resist them and eat current faddy food until it comes out my ears and I am quite plainly sick of the sight of it.
And so it is the little bowl of loveliness above. One could hardly call it a recipe, I am not after all renowned for my recipes, and truth be told if I was to declare it my recipe, the word “porky pie” would come to mind as I actually first enjoyed this pink chick pea-d joy at my sisters, where it was served topped with a caper sprinkled piece of cod (oh salty lovely joy!) and a smile.
Regardless of it’s origins, it is bliss. The kind of bliss I am eating on a daily basis. The kind of bliss I will soon be sick of, but cannot currently get enough of, especially as it takes all of five minutes to whip up and is the kind of fat free joy that makes me feel like ringing up the local slimming world group and asking them for a gold star…
Ramble, ramble, ramble. When all you really want to know is what is in it right? Ok, one tin of warmed chickpeas, a handful of chopped coriander, and some beetroot, (preferably of the Sweetfire variety), mixed up and erm, that’s it. A bowl full of pink food that will have you swooning with the added bonus of turning your wee a rather startling shade of magenta. And yes, I agree, that was probably totally inappropriate in a post about food but sometimes I just cannot help myself…
